Zucchini Pie


Oh so simple. And delicious. This zucchini pie recipe is a great way to use those wonderful summer vegetables .

This is a great zucchini pie recipe for a weekday dinner given to me by wonderful friend, Rhonda. Rhonda is a great cook and she shared this simple yet delicious zucchini (courgette) recipe with me.

Zucchini, also called courgette, are dark and majestic looking. They are mild in flavor yet deceptively good for you. Zucchini is low in calories and contains folate, potassium, Vitamin A and manganese.

INGREDIENTS
6-8 Zucchini
1 onion, chopped
1 tbsp. olive oil
4 eggs
1 cup cottage cheese
2 tbsp. flour
1/4 cup liquid (milk, soy milk, rice milk, vegetable broth)
1 tsp. thyme
Salt and pepper to taste
2 tbsp. sesame seeds
OPTIONAL1/2 cup grated cheese



PREPARATION
1. Heat the olive oil in a pan. Sauté the onion until translucent. 2. Slice the Zucchini into thin circles (don't peel).

3. Add the zucchini slices to the pan and sauté for about 10-15 minutes. Watch the pan and stir the vegetable from the bottom every now and then. Zucchini is a "watery" vegetable so at first you see a lot of liquid in the pan. Keep sauteing and stirring until there is no more liquid.

4. While the vegetables are cooking, mix the cottage cheese, eggs, seasoning, flour and milk/broth together.

5. Let the vegetables cool a bit and then slowly fold them into the egg custard. If they are too hot the egg will curdle so allow them cool.

6. Pour the mixture into a casserole dish or a pie plate. If you are using cheese, sprinkle the grated cheese over the top.

7. Sprinkle the sesame seeds over the top of the pie.

8. Bake at 180C (400 F) until the pie is set and the top is golden.
