Watermelon Summer Salad

This is a simple recipe for an unusual salad - Watermelon Salad is both fresh and refreshing!

I know this may seem like a weird combination but this salad is a refreshing and delicious addition to any summer meal. I tried this out on my family and guests this weekend and it went over especially well. Dare to be adventurous!

About 1/4 of a seedless watermelon
Fresh figs – about 6 or 7
1 bag of salad greens OR about 2 cups of lettuce
200 gr feta cheese or any other salty goat or sheep cheese
1/2 cup olive oil
1 tsp. honey
2 tbsp. balsamic vinegar
2 tbsp. lemon juice
Salt and pepper to taste

1. Cut the watermelon into small cubes – you need about 2 cups of cubes.

2. Cut the cheese into small cubes.

3. Cut the figs into quarters.

4. Place the melon cubes, cheese cubes and figs into a serving bowl.

5. Add the salad greens and toss gently.

6. Mix the oil, lemon, vinegar, honey, salt and pepper together. You can whisk all the dressing ingredients together in a bowl or shake them up in a jar – the idea is that they are mixed well.

7. Pour the dressing over the salad and toss.

8. Serve.
