Watermelon Gezpacho

Okay. I know this sounds wierd - but really - Watermelon Gezpacho is really de-lish-us and so easy to make!

Gazpacho is usually a tomato-based, vegetable soup, traditionally served cold, originating in the southern Spanish region of Andalucía.

This recipe is a bit different than the original - it is fresh, crisp and totally off the wall. And is really a great summer soup. You will love it!


2 ripe tomatoes

about 3/4 watermelon 

1 cucumber

10 mint leaves

1/4 cup olive oil

2 tbls. lemon juice

salt to taste

OPTIONAL feta cheese cubed for serving


Roughly chop the vegetables and watermenlon and place in a blender or food processor. 

Blend until chunky-smooth - not like a smoothie - keep it a bit chunky.

Add the olive oil, mint leaves and lemon juice and salt to taste. Whiz once again.

Serve with in bowls or cups with a drizzle of olive oil over top. You can add feta cheese cubes if you like. this adds another dimension and goes over well.
