Watermelon Cups

Watermelon Cups Salad Appetizer is a refreshing & delicious starter for any summer meal. It is a beautiful presentation and will surely surprise & delight your diners. And it’s EASY!! & you all know how I LOVE easy!

INGREDIENTS

  • 1/2 a watermelon (seedless)
  • 1-2 cucumbers - peeled and very finely diced
  • 5 tsp very finely chopped red onion
  • 2 tsp minced fresh mint
  • 2 tsp minced parsley
  • 2 tsp minced fresh corriander (cilantro) - optional
  • 1/2 to 1 teaspoon lime juice or lemon juice

DIRECTIONS

    • Cut the watermelon into 1 inch / 2.5 cm cubes (approximately – you can eyeball the size). Try to get all the cubes to look uniform.
    • Using a small melon baller (AKA Parisienne scoop) or measuring spoon, scoop out the center of each watermelon cube. The idea is to have a depression deep enough to fill with the veggies.
    • In a separate bowl, combine the cucumber, onion and mint, parsley, coriander and lime juice.
    • Very carefully spoon the salad into the watermelon cubes.
    • Drizzle with a dollop of olive oil right before serving.

This recipe is for 16 watermelon cubes – one per diner. This was a GREAT hit with my family – the kids LOVED it so much and they all ate more than one each.

These can be made ahead and refrigerated until serving time. This is such an easy recipe and it is such an exquisite appetizer – really worth trying!
