Vegetarian Sloppy Joes with tofu and hot pepper

•1/2 Kg. / 1 lb firm tofu

•2 Tbsp olive oil
•2 Tbsp chopped pepper
•1 Tbsp chopped fresh garlic
•2 Tbsp chopped onion
•1 Tbsp chopped hot (jalapeño) pepper
•Pinch dried cayenne(to taste)
•1 tsp mustard
•1 cup water
•1/4 cup ketchup
•1 Tbsp soy sauce
•2 tsp brown sugar
•Salt and pepper to taste

1.Mash tofu and mince the vegetables.
2.Heat oil on medium frying pan, fry onion & garlic 5 minutes.
3.Add tofu, jalapeno & pepper, sautee 5 minutes.
4.Add spices, mustard and water.
5.Add ketchup, water, soy sauce, brown sugar and simmer 10 minutes
6.If the mixture seems too dry add water or broth.
7.Serve over buns sliced tomato, chopped lettuce, avocado slices & mayo or anything you like!
