Sweet Potato Thai Vegetarian Curry


This Thai-inspired Vegetarian Curry with sweet and regular potatoes is a simple dinner recipe bursting with the fragrance and flavours of the Far East.
Mmmm-mmm-mmm.


Thai dishes are light and fragrant and flavourful and absolutely delicious. This potato curry is all of that PLUS it is really simple to throw together.

INGREDIENTS
1 large sweet potato (yam) or 2 small ones
2 regular potatoes
1 large onion, chopped
3 cloves of garlic, minced
3 tbsp. oil
Juice from 1/2 lemon
Lemon grass OR dried lime leaves OR zest from one lime or lemon
1 tsp. of salt
1/2 tsp. chille flakes, or more to taste
1 tin coconut milk
1/2 cup water
2 cups cooked rice

PREPARATION
1. Sauté the onion.

2. When the onion is translucent, add the garlic and stir.

3. Cut the sweet potato and regular potatoes into bite-size cubes.

4. Add all the potatoes to the pot and stir. Let the potatoes cook with the onions for about 5 minutes

5. Add all the remaining ingredients (except the rice) and simmer until the potatoes are soft. You may want to cover the pot towards the end so the liquid doesn't cook out.

6. Serve over rice.

Need a quick recipe for cooking rice….? Sauté 2 cups of rice in 3 tbsp. olive oil. Stir over the heat until the rice grains are coated with oil and toasted. Add 4 cups hot water and salt. Cover the pot and simmer until the rice is cooked through. OR follow the directions on the package.
