A Delicious Vegetarian Burger Recipe

Mimi's Vegetarian Bulgur Burger



This Vegetarian Burger Recipe is packed with protein and is simply delicious. By combining bulgar with tahini paste you're making a complete protein for a great vegetarian main dish. I talk a bit more about protein combinations in the "Complete Proteins" page, where I'll also give you ideas for other simple vegetarian recipes.

INGREDIENTS
1 cup bulgur, cooked OR 1 cup brown rice, cooked
1/2 cup Tehina paste (ground sesame paste) (undiluted)
1/2 cup cottage cheese
1/2 cup bread crumbs (preferably whole wheat)
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. soy sauce

PREPARATION
Preheat the oven to 180C (350F).

Mix the bulgur (or rice), tehina, cottage cheese and 1/4 cup bread crumbs, salt, pepper and soy sauce together well. Form patties (it is easier if you wet your hands). Roll the patties in the remaining bread crumbs to cover.

Place on an oiled baking sheet (you can use cooking spray to save calories) and bake for 10-15 minutes.

Of course you can have fun playing around with different flavour options - for instance punching up the flavour by adding chopped fresh herbs, or perhaps adding a tablespoon or two of tomato paste. The options are endless.
