Vegetable Stew Recipe

This is a delicious vegetarian stew made from Beans and Vegetables

This Vegetable Stew recipe is sure to please your family. It is rich and filling and the combination of beans and rice makes a complete protein (read more on complete proteins) and gives the stew a great texture. The vegetables and unique seasoning make this an especially tasty dish.

1 cup kidney beans, uncooked
2 onions, sliced thinly
2 potatoes, sliced thinly
2 carrots, sliced thinly
8 garlic cloves, sliced thinly
1 large, ripe tomato, chopped
4 tbsp. tomato paste
1 tsp. ground cinnamon
1 tsp. curry powder
1 tsp. salt
1 tsp. pepper
2 tbsp. brown sugar OR honey
1 cup water
1 cup brown rice
2 1/2 cup water

Soak the beans overnight (or at least 3 hours) in cold water. Drain the soaking water. Place in saucepan, fill with water to cover and cook until the beans are soft. Drain. If you want to skip this stage, use two tins cooked kidney beans, rinsed well.

Place the cooked beans and all the sliced vegetables, tomato paste, cinnamon, curry powder, salt, pepper and sugar in a pot. Add 1 cup water and simmer on low heat until all the vegetables are soft.

In a separate pot, cook the rice in 2 1/2 cups water until done.

Serve the stew over the rice for a filling evening meal.
