Vegetable Bulgur Casserole

This is a super-simple dinner casserole packed with nutrients and protein – but don't forget the great flavour!

This Vegetable Bulgur Casserole is packed with protein and is simply delicious. By combining bulgur with the vegetables and cheese, you receive a complete protein for a great vegetarian main dish. 2 medium carrots, sliced in circles
2 potatoes, sliced thinly
1 onion, chopped
1 head cabbage, sliced thinly or shredded
1/4 cup olive oil
1 cup bulgur
1 1/2 cup water, boiled
1 cup sharp cheese, grated
3 tbsp. fresh dill, chopped
Salt & pepper, to taste

Sauté the onion in olive oil for 3 minutes. Add the carrot, cabbage and potato slices and sauté a few minutes longer. The carrots should remain crisp and the cabbage will become bright green. That's when you know it's one.

Place the bulgur in a sauce pan. Pour 1 1/2 cup boiling water over the bulgur. Cover the pot and let stand for 5 minutes. Now simmer (covered) on low heat for 3 minutes more.

In a large mixing bowl, combine the vegetables, bulgur, salt, pepper, dill and grated cheese. Mix well so that all ingredients are combined.

Pour into a large oven-proof dish which has been brushed with olive oil (or cooking spray) and bake for 30-35 minutes is a preheated oven (180C, 350F).
