Vegan Carrot Cake Recipe (No Eggs, No Dairy)

Ingredients:


1/4 cup applesauce
1 tsp vanilla
1/2 cup margarine, softened
1 tsp salt
1 1/2 tsp baking powder
2 tsp cinnamon
1 cup sugar
1 1/4 cups flour
1/4 cup soy or rice milk
1 cup finely grated carrots
1 cup chopped walnuts (optional)

Preparation:

Preheat oven to 325F (160C) degrees.
Lightly grease and flour a 9-inch square baking pan.
Combine together all ingredients, adding the carrots and walnuts last. Spread batter evenly in the baking pan.

Bake for 45 minutes.

delicious cake - I subbed coconut oil for the margarine and whole wheat flour and brown unrefined sugar. it came out delish. i highly recommend!
