Simple and Delicious Tomato Soup Recipe

This Tomato Soup Recipe makes the perfect meal on a rainy cold night or any time you want a hearty and SIMPLE soup with rich flavours and delicious basil aroma. This rich Tomato Bread Soup is absolutely YUMMY!

6 ripe tomatoes
Olive oil
4 Garlic cloves
Basil leaves minced
1 can crushed tomatoes (500 gr/16 oz)
1 loaf crusty sour dough bread or any crusty bread
Salt and pepper to taste

1. Cut the tomatoes into quarters. Now remove the seeds and membrane. Spread on a cookie sheet. Place the garlic cloves on the cookie sheet as well. Drizzle olive oil liberally over the tomatoes. Sprinkle with salt and pepper. Place in the oven at 180C (400F) for about 20 minutes. The tomatoes will caramelize and all the flavours will be enhanced.

2. In a soup pot heat 2 tablespoons olive oil and add the basil leaves. Stir.

3. Pour the tin of crushed tomatoes into the pot. Fill the tin with water and add to the soup pot.

4. Season with salt and pepper.

5. By now the tomatoes and garlic should be nicely grilled, Remove the skins from the garlic cloves and add the garlic to the soup. Add the grilled tomato wedges to the soup. Bring to the boil and then reduce the heat to a simmer.

6. Tear about half the loaf of bread into chunks and add them directly to the soup. The bread will soak up the liquid and the soup will become thick and chunky and mouth-watering yummy!

7. Serve! Place the soup in a bowl. Drizzle olive oil over top. If you like, you can sprinkle a tablespoon of parmesan cheese over top or a dollop of sour cream. YUMMY!
