Tomato Quiche Souffle

This is an elegant yet simple dish to make – great for a simple summer dinner or as a starter for a Holiday Meal.

Tomato Quiche Souffle sounds complicated, but trust me, it's not! My motto is "simple and easy" and that's what the recipes on this site are all about. This Soufflé recipe is made of ingredients you've always got on hand and takes almost no time to put together.

6 medium-large firm tomatoes
3/4 cup grated cheese
3 tbsp. cream
4 tbsp. flour
4 eggs, separated
1 tbsp. chopped basil leaves (or 1 tsp. dried)
Salt & pepper, to taste

Slice off the tops of the tomatoes. Hollow out the tomatoes with a small spoon or using a melon-baller tool. Chop the insides and drain off all liquid. Place in a mixing bowl and add to it the cheese, cream, flour, basil, salt, pepper, and 4 egg yolks. Mix.

Beat the egg whites using an electric mixer until stiff peaks can be formed. Using a silicone spatula, fold the egg whites gently into the tomato-cheese mixture. It is perfectly okay of you see blobs of egg white throughout the mixture – this will keep the soufflé light – don't try to make a smooth mixture.

Spoon the filling mixture into the tomato shells filling each tomato completely.

Bake at for 30-35 minutes in a preheated oven (180C, 350F). Serve immediately for the best effect and to make a real impression on your diners, as soufflés tend to drop shortly after they are removed from the oven
