This quick and easy Side Dish recipe is the perfect addition to any meal. Its tastes great hot or cold and keeps well. It's great for family meals, picnics, and even stuffed inside a pita pocket bread for a light lunch!
INGREDIENTS 3 tbsp. olive oil 1 onion, chopped 2 cloves garlic, minced 2 potatoes, diced small 4 ripe tomatoes, diced 15 black olives, pitted and chopped 8-10 fresh basil leaves, chopped (or 1 tsp. dried basil) 2 tbsp. chopped parsley Salt and pepper to taste
PREPARATION Sauté the onion in the olive oil for 2 minutes. Add the diced potato and stir for about a minute. Now add the tomatoes and garlic and cover the pan. Over low heat, simmer the tomatoes and potatoes for about 8 minutes, stirring every once in a while. If the vegetables start sticking, you can add a few tablespoons of water. When the potatoes are soft, stir in the pitted olives. Add salt and pepper to taste (the amount of salt depends on how salty the olives are).
Remove the pan from the heat and stir in the basil and parsley.
You can serve this tasty side dish, hot or room temperature. It's also great inside pita sandwiches with cream cheese or added to a toasted cheese sandwich. The options are endless - use your imagination and see where it takes you.
