Tofu Filo Packages

Tofu Filo Packages - are little bundles of flaky phylo dough with creamy herbed tofu filling.

Hubby and I went to the wedding of a dear friend's daughter. The venue was gorgeous, the food was gourmet and the entire evening was amazing. Our hosts graciously ensured that the veggies among their guests would have a meal just as pampering and delicious as the elegant steak dinner served to the general population.

The vegetarian meal was pleasing to the eye and to the palette and of course, I had to try to recreate the recipes at home.

So this is my attempt at the Tofu Filo Packages - just one of the many tasty treats we ate that evening.

1 package tofu cream cheese - if you want to make your own tofu cream cheese, follow the recipe below. But it is so much simpler to us the packaged prepared tofu cheese.

12 sheets filo dough (sometimes call phyllo)

4 mushrooms - sliced

1/4 cup olive oil - OR - spray oil

salt and pepper to taste

optional - sliced green olives

You can make these little tofu filo packages with mushrooms or olives - or both if you like.

For the sauce:

1 onion finely minced

2 ripe tomatoes diced

2 tbsp olive oil

salt and pepper

8-10 basil fresh leaves chopped

1/4 cup chopped parsley

Saute the mushroom slices in olive oil. Set aside.

If you want to use olives, slice 10-12 pitted green olives and set aside.

Filo (phyllo) dough can be tricky so treat it gently. Follow the package instructions so that it won't dry out. phyllo dough is fragile and thin. Always keep the sheets covered with a damp cloth or plastic wrap.

Place one sheet of filo dough on your counter top. Brush olive oil over the entire sheet OR spray the olive oil over the sheet. Layer anther sheet on top amd brush/spray the olive oil.

Cut these two sheets in thirds lengthwise.

Place a generous dollop of the cream cheese on the end of each strip. place one or two mushroom slices or 2-3 olive slices on the cream cheese. Now, start from the end and fold the filo dough over the filling. Continue folding the little package while tucking in the sides as you go along. Each strip makes one little package.

Continue in this manner with the remaining ingredients until you have used up all the filo sheets. You will have 18 little bundles with a rich, tasty filling. Place them on a lined baking sheet and brush/spray the tops with olive oil. You can sprinkle sea salt over the top if you like.

Bake at 180C / 350F for about 12 minutes - just until the tops are golden and crispy.

While the tofu filo packages are baking, saute finely minced onion together with the diced tomatoes in olive oil for 2-3 minutes. Add salt and pepper and continue cooking and stirring a bit longer. Stir in the finely chopped basil and parsley. Remove from heat.

Once the tofu packages are golden, serve them hot with the sauce - add a salad and you've got a lovely meal!
