Sweet Potato Puffs

These simple Sweet Potato Puffs are simple to make yet very impressive to serve.

This simple side dish is easy to put together, although it may be a bit time consuming. The puff pastry can be bought frozen in any supermarket. You can cut down the preparation time by buying the pre-cut pastry squares.

1 package puff pastry pre-cut squares OR 1 package regular puff pastry in a roll
2 medium sweet potato (yam)
2 medium potatoes
3/4 cup cottage cheese OR low-fat cream cheese
1 egg
1 tsp. grated lemon zest
Salt and pepper, to taste
Chili powder to taste (optional)
1/2 tsp. powdered ginger (optional)
1/4 cup Grated cheese (optional)
(Use at least one of the three options, above, preferably 2 or all 3)

1. Remove the puff pastry from the freezer and allow to defrost to room temperature. If you using the pre-cut squares, ensure that they are separated before defrosting otherwise they will stick to each other.

2. Cook the sweet potatoes (yams) and potatoes in the microwave until they yield to pressure. If you prefer not to zap them, then bake in the oven until they are cooked through. Let cool.

3. Peel the potatoes and sweet potatoes and place the pulp in a bowl. Mash the pulp.

4. Add all remaining ingredients (cheese, eggs, seasoning).

5. If your puff pastry is not pre-cut, then unroll the pastry so it's flat. Cut out squares (9 cm X 9 cm / 3.5 X 3.5 in.)

6. Place 1 spoonful of filling in the middle of each pastry square. Fold the pastry square into a triangle and press the seams together with the tines of a fork. At this stage, I like to take the two outer points of the triangle and press them together giving the puffs a nice rounded shape. This is entirely up to you.

7. Grease a baking pan or cookie tin (I like to use butter flavoured cooking spray) and arrange the Sweet Potato Puffs on the tray. If you are using the cooking spray, spray the tops of the pastry bundles. If you are not, melt 2 tbsp. butter and brush the tops of the pastries. Cover with cling wrap and place the tray in the refrigerator for at least one hour.

8. Bake at 180C (400 F) for 15-20 minutes, or until golden. Serve hot.
