Sweet Potato Pie Recipe

This Sweet Potato Pie recipe is a wonderful holiday dinner dish.

Many years ago I was out to dinner with my husband and one of the menu offerings was a Sweet Potato Pie. I had to try it and it was fantastic. The restaurant we ate at has since closed but I have made my own version of Sweet Potato Pie which is very loosely based on the one I had at that restaurant. I have mentioned elsewhere in this site that my youngest son, Lior, adores sweet potato (yams) and loves everything made with them. Some other Sweet Potato recipes that have become my family's favourites are my Sweet potato Soup and Bulgur & Sweet Potato side dish.

1 1/4 cup flour
3/4 cup (150 gr) butter or margarine
1/4 cup orange juice OR water
Pinch of salt

4 sweet potatoes
4 eggs
1 cup sour cream OR yogurt OR cottage cheese
1 tsp. dried thyme OR fresh thyme leaves
1/2 cup grated cheese (any type you like, goat cheese works especially well)
1/2 tsp. salt
1/2 tsp. pepper

Mix the crust ingredients together. First cut the butter into the flour and salt and then add the juice or water slowly until a ball can be formed. This can be done easily in a food processor as well but do not overwork the crust or it will become tough. I hate rolling out crusts and messing up my counter top, but if you don't mind, roll out the crust and place it in a greased pie plate. Or you can do what I do: I form the dough into a ball and place it on the bottom of the pie plate. Then I flatten it with the palm of my hand. Then I take a sheet of cling film just bigger than the pie dish and place it over the flattened dough. Using the cling wrap, I gently push the dough out from the centre to the edges until the entire pie plate is covered.

Prick the skin of the sweet potatoes a few times with a sharp knife. Place a piece of kitchen towel on the bottom of your microwave oven and put the potatoes on it. Start your microwave oven on high or whatever setting is for baking potatoes (they're all different so I can't give you exact times and temps.). The end result should be baked potatoes that are soft inside. This can be done in a regular oven as well but it takes more time. Remove the sweet potatoes from the microwave and let them cool off.

Once the potatoes are cooled, slice them in half lengthwise and scoop out the flesh from the skins. Place the potato flesh in the food processor together with all the rest of the filling ingredients except for the grated cheese. Process until smooth. Fold the grated cheese into the filling mixture. Pour the filling into the unbaked pie shell. Bake at 180C (350F) for 20 minutes or until the filling is firm in the center and the pie crust is golden around the edges.

This is the best Sweet Potato Pie recipe I have tasted. It always goes over well with company, too! Serve with a nice salad and you have a lovely light dinner!
