Stuffed Artichokes

Simple and simply delicious – these stuffed artichokes are easy to make and mouth-wateringly yummy!

People love artichokes but don't always know how to prepare them – so I've come up with this simple recipe for Stuffed Artichoke Hearts which is always a hit when I serve it. Try it and see if it works for your family too! If you like this recipe, you may also like Mafrum Stuffed Potatoes

1 package frozen artichoke hearts (found in the freezer section at the supermarket)
1 cup quinoa OR bulgur OR a combination of both
1 carrot, grated finely
1 onion, grated finely
Salt and pepper to taste
1 egg
2 tbsp. water
1/4 cup flour
1/4 cup bread crumbs
1 tin crushed tomatoes
2 cloves garlic, crushed
1 tsp. sugar
Salt, pepper to taste
1 tbsp. lemon juice
1/2 cup any vegetable oil for frying (don't use olive oil)

1. Thaw the artichoke hearts. (If you can't find the frozen ones, you can try the tinned artichoke hearts - it's not preferable but it'll be okay).

2. Cook the quinoa and/or bulgur until done. [If it's quinoa, place in a pot with salted water (2 cups water to each cup of quinoa) and bring to the boil. Simmer for about 10-15 minutes. If you are using bulgur, place in a bowl and pour boiling water to cover. Place a place over the top and let sit for 15 minutes. Drain excess water].

3. Mix the quinoa/bulgur, grated carrot, grated onion, salt and pepper.

4. Now, take each artichoke heart and fill with the quinoa/bulgur stuffing. Pack the stuffing in and form a little mound.

5. In a pan, heat the oil.

6. Mix the flour and bread crumbs together on a flat dish. Beat the egg and 2 tbsp. water together in bowl. Dip each stuffed artichoke heat in the egg and then dredge in the flour mixture.

7. Place in the hot oil and brown on all sides..

8. Once all the artichoke hearts are golden, add the tinned tomatoes, garlic, sugar, salt and pepper.

8. Simmer for 10-15 minutes.

9. Serve warm or hot.
