Vegetarian Spinach Artichoke Dip Recipe

How often have you seen this Spinach Artichoke Dip recipe on restaurant menus and longed to be able to recreate this creamy delicious dip at home – but maybe a tad bit healthier version? Here it is – deliciously yummy and really EASY to make!

VERY tasty and oh-so-easy to make! This is the a really good starter to a meal, or as a dip with crackers and crusty bread for company. It is so simple and so yummy, you can make it anytime! This can be made vegan or dairy – whatever works best for you.

1/2 c fresh spinach
3/4 c Parmesan cheese or soy/vegan Parmesan
2 c marinated artichoke hearts, drained – 1 jar should do it
1/4 t pepper
1 tbsp fresh lemon juice
1 c mozzarella cheese or soy/vegan mozzarella, grated
A bit of oil for greasing the casserole

Preheat oven to 350F/180C.

Combine everything except 1/4 c Parmesan in a blender or food processor and process until smooth.

Lightly oil the casserole dish and pour the mixture in. Sprinkle with the remaining 1/4 cup parmesan.

Cover with tin foil and bake until hot, about 20 minutes.

Let cool for 5 minutes and then dip in with crackers, crusty bread, or sliced fresh veggies.
