2 cups brown rice (use white or a mix of both if it works better for you)
2 tbsp. olive oil
4 cups water
2 carrots cut into small cubes
1/2 cup dark raisins
1 tsp. cumin powder
1 tsp. curry powder
2 tsp. salt
pepper to taste
1 tsp. sugar
Heat the olive oil in a saucepan. Add the rice and stir until the grains are toasted and coated in the oil. Pour in the water and cook covered until cooked through. Cooking time can depend on the type of rice used.
When the rice is cooked ala dente, add all the remaining ingredients and 1/2 cup water. Mix well. Cover the pot and heat through until all the water is absorbed and flavours have merged with the rice.
