Sesame Snaps


These sweet and crunchy Sesame Snaps are a simple candy that is quick and easy to make.


It's fun to make home-made candies and these sesame snaps are really easy to make. The "secret" to this recipe is the addition of lemon and ginger.

INGREDIENTS
1 1/2 cup sesame seeds [if you want to be really fancy, use 1 1/4 cup sesame seeds and 1/4 cup black sesame seeds]
3 cups sugar
Juice from 1 lemon
1 tsp. ground ginger
1/4 tsp. of salt

PREPARATION
1. In a clean, dry pan, toast the sesame seeds while stirring continuously. This takes patience and a watchful eye because you really do not want the sesame seeds to burn. Their colour will change ever-so-slightly to a yellow-y tone but it is a really subtle change.

2. Remove the sesame seeds from the pan and set aside.

3. Pour the sugar into the hot pan and let it caramelize – don't stir for the first few minutes while the sugar melts and turns a golden colour. From that point stir continuously until all the sugar is melted and is a nice golden colour – be careful not to let the sugar burn and not to burn yourself in the process.

4. Very carefully, pour the lemon juice into the caramelized sugar. The sugar will seize up with the addition of the liquid – just keep stirring – stirring – stirring.

5. Add the ginger and salt.

6. Remove from heat and stir in the toasted sesame seeds. Make sure the sesame seeds are mixed in well and completely.

7. Now you really have to work fast.

8. Pour the mixture onto a sheet of waxed paper or a silicone baking sheet (this is really the best) and spread out as evenly as you can to form a large, flat, thin (1/2 cm / 1/4 inch) sheet.

9. Let the candy set for a few minutes (maybe 5 or so). Using a sharp knife, score the sheet of sesame candy to form 1 cm / 1/2 inch squares or diamond shapes. Let cool completely. Once the candy is cooled, you can remove the waxed paper/silicone sheet and break the candy pieces apart (along the scored lines).
