Roast Potato Recipe with Sweet Potatoes


This savoury Roast Potato Recipe with Sweet Potatoes and White Potatoes is elegant and fragrantly delicious.


This is a really simple potato recipe but everyone seems to really love it. It is great for Thanksgiving or for anytime at all really. And easy, easy, easy – just the way I like it!.

INGREDIENTS
3 sweet potatoes (yam)
6 white (regular) potatoes
1 garlic head (the whole garlic) or even two
1/4 cup Olive oil
1 tsp. dried rosemary OR (preferably) fresh rosemary sprigs – about 4 sprigs
Salt and pepper to taste

PREPARATION
Peel the potatoes and cut into wedges

For the sweet potato cut in half lengthwise and then cut each sideinto 4 wedges and then cut each wedge in half.

For the potatoes, cut each in half lengthwise and then cut each side into 4 wedges.

Place them in a large oven dish - 9*13" or bigger if you have. I use alarge tin foil disposable baking dish - easier for clean up :-) !

Pour about 1/4 cup olive oil over the potatoes. Add salt and pepperand sprinkle rosemary leaves throughout. Using your hands or a bigspoon, mix up the potatoes so that they are evenly covered with theoil and spices.

Place the garlic head in the middle of the pan - movethe potatoes out of the way so that the garlic snuggles down betweenthem. Cover tightly with tin foil.

Roast in a hot oven (400F, 200C) for 1/2 an hour and then remove the tin foil and lower the heat to 320F, 150C for another45 minutes. It could take longer - you need to test the potatoes.

That's the whole deal! You can cut the potatoes into cubes if youprefer of even slices. Whatever works for you.

Hint: I have found that if you soak cut potatoes in cold water for 1/2hour to one hour before you roast them they come out even BETTER - Idon't know why but it really works. Just soak, drain and then followthe recipe.
