Rice Stuffed Grape Leaves

Garlicky and tangy, these Rice Stuffed Grape Leaves can be a great appetizer. Easy to make and delicious as well, this is a great vegetarian recipe.

Rice Stuffed Grape Leaves can be a perfect starter to a dinner menu or even a light meal on their own with a nice green salad on the side. You may want to try the Quinoa Stuffed Grape Leaves as well.

1 onion, minced finely
2 cloves garlic (the garlic is what makes this recipe)
1 cup brown rice, partially cooked and cooled (a-la-dente)
Salt and ground black pepper
1/2 tsp. salt
2 cups vegetable broth OR water with a vegetable soup bullion added
About 1/4 cup Good quality olive oil
1 package or jar grape leaves, rinsed and dried. Snap off the stems
1 lemon
1 cup yogurt (the thick creamy Greek yogurt is best)
1 tbsp. finely chopped mint

1. Packaged grape leaves are sometimes salty so I like to soak the leaves, rinse and dry them on a kitchen towel.

2. Heat 1 tbsp. of olive oil in a pan. Add the minced onion and sauté for a minute or two. Add the minced garlic to the pan.

3. Add the onion and garlic to the cooked rice.

4. Add the salt and pepper to the rice.

5. Flatten a grape leave on your work surface (vein-side up). Place one tbsp. of rice mixture on the bottom edge of the leaf. Roll the leaf from the bottom and fold in the sides until you have a stubby cigar-like shape. Place the stuffed grape leaf seam-side down on an ovenproof baking dish. Repeat with all your grape leaves and rice filling. You should get about 3 dozen little cigar-logs and you may need two baking pans.

6. Mix together the vegetable broth and 1/4 cup olive oil. Pour over the grape leaves. Slice the lemon into thin slices and place the slices over the top of the rice stuffed grape leaves.

7. Bake at 180C (350F) for 35-40 minutes.

8. To serve, mix the chopped mint with the yogurt in a small bowl. Place the bowl in the middle of a serving platter and arrange the grape leaves around the yogurt dip. Drizzle olive oil over the grape leaves. Each diner takes the stuffed leaves suffused with the olive oil and a dollop of minty-yogurt over top. This is truly a delicacy and worth the effort of making them.

9. The rice stuffed grape leaves can be served hot or cold.
