Rice Crispy Treats


Even snacks & dessert can be protein packed and totally yummy!


This recipe for Rice Crispy Treats may remind you of the classic rice crispy and marshmallow treats we grew up on – but it's different. It's better – better tasting and better for you and the kids love 'em!

INGREDIENTS
2 1/2 cups rice cripies-type breakfast cereal
1/4 cup brown sugar
1/2 cup Silan Date Syrup OR honey – Silan is an Israeli product made from dates and can be a good substitute for honey or sugar if you can find it in a shop near you. It's packed with iron and nutrients.
1 cup peanut butter
A handful of any or all of the following: walnuts, raisins, white/dark chocolate chips, coconut flakes, chopped dates

PREPARATION
Place the sugar and silan OR honey in a saucepan and bring to a boil. Turn off the heat and stir in the peanut butter until it is blended in.

Stir in the rice crispies and additional goodies (nuts, raisins etc.)

Spoon the mixture into mini paper baking cups (like the fluted paper cups muffins are baked in but smaller). Chill the treats for at least half an hour before serving.

And you know what? These are equally delicious when made with cornflakes or any other type of breakfast cereal. Even Granola works!.
