Rhubarb Squares


Sweet and just a little bit tart, these Rhubarb Squares are a delicious treat!


I wanted to share my fabulous experience in Alaska! You know I love to travel (who doesn't?) and this time we went on a family cruise vacation to Alaska. One of the Ports of Call was Skagway... Teensy Tiny little typical Alaskan town. But in Skagway you can find the Jewell Gardens - Amazing marvelous and incredible gardens - all organic flowers and plants that thrive in the Land of the Midnight Sun! And then you happen upon this little JEWEL of a restaurant hidden in the corner of this beautifully manicured, colourfully designed, whimsical garden. And the food is just amazing. Delicious. I was told by our guide that the chef's name is Jamyra but I didn't get to meet her. Jamyra made a wicked rhubarb pastry. I couldn't get the recipe from Jamyra but I tried to replicate it … this is my feeble attempt at Jamyra's Rhubarb Squares. BTW - Alaska is a great holiday destination - go if you can - you will love it!

INGREDIENTS
CRUST
1 cup flour
1/4 cup sugar
1/2 cup butter at room temp.
FILLING
2 eggs
1 1/2 cup sugar
1/4 cup flour
Pinch of salt
1 Tsp. vanilla essence
2 cups finely chopped rhubarb

PREPARATION
1. Preheat the oven to 180C (350F).

2. Mix together the crust ingredients. Press the dough into a greased rectangular baking pan (Pyrex 9x13 is good for this).

3. Bake the crust for 15 minutes. Bake just until golden – don't over-bake.

4. To make the filling, beat the eggs and sugar together. Add the vanilla essence, flour and salt. Stir in the chopped rhubarb.

5. Cool completely and then cut into squares.

6. Serve. mmmmmmmmmm
