Red Pepper Soup

INGREDIENTS:

2-4 red peppers
3 cups diced sweet potato
1 onion
2 cloves garlic
1/4 cup dry white wine
1 1/4 cup vegetable stock
hot pepper sauce - to taste
salt and pepper

Put chopped peppers, sweet potato, chopped onions and garlic in a pot with the wine and stock. Bring to a boil and simmer 20 minutes.

Remove veggies with a slotted spoon and blend in a blender or food processor. You can also use a blender stick and puree the vegetables right in the soup pot.

Season to taste with pepper sauce and salt and pepper.
Serve
