Quick Easy Quinoa Recipe for Quinoa, Corn & Avocado Salad


This simple Quinoa (kinwa) corn and avocado salad is bursting with protein, nutrients and lots and lots of flavour. Try this delicious quinoa salad recipe and you will be hooked forever!


This is yet another recipe for a quick and easy quinoa (kinwa) dish. The combination of flavours and textures is very alluring and will appeal to the entire family.

INGREDIENTS
For the salad
1 1/2 cups cooked Quinoa*
1 cup corn kernels, fresh, frozen or tinned
1 red pepper diced
3 green onions (scallions) chopped
2 ripe tomatoes, chopped
1 ripe avocado, peeled, pitted and diced
2 cups chopped lettuce (1 small head of lettuce)
1/4 cup pumpkin seeds

For the dressing
1/4 cup olive oil
1 clove garlic, crushed
1/8 cup lemon juice
1 tsp. dried oregano
Salt and pepper to taste
OPTIONAL
Crushed chili peppers to taste

PREPARATION
If using frozen corn kernels, defrost before assembling the salad.

Mix all the salad ingredients together except for the pumpkin seeds.

Whisk the dressing ingredients together until well emulsified.

Toss the salad with the dressing and top with the pumpkin seeds.
