There is nothing simpler than this Quick Easy Pasta Recipe for a simple pasta dish – you don't even have to cook the pasta! Just mix it up and pop it in the oven! Voila easy and delicious Pasta Casserole Recipe!

Easy Pasta Recipe


I saw this penne pasta recipe on a local cooking show station and thought it was such a FANTASTIC idea. For years I haven't cooked Lasagna noodles before assembling the Lasagna casserole so why shouldn't it work for penne pasta as well? Simply Brilliant! And WOW - easy!

INGREDIENTS
1 package (250 gr, 1/2 lb) penne pasta or elbow pasta or any short pasta
250 gr (1/2 lb) soft feta cheese (you can use cream cheese too if you like)
1 large tin (800 gr., 28 oz.) crushed tomatoes
1/4 cup olive oil
2/3 cup bread crumbs
1 tsp. dried oregano
Salt and pepper to taste

PREPARATION
Prepare a Pyrex casserole dish (or any suitable pan) by greasing well and sprinkling 1/3 cup bread crumbs.

In a bowl, mix together the pasta, crushed tomatoes, olive oil, cheese and seasoning.

Pour the mixture into the prepared casserole dish.

Spread the remaining bread crumbs over top.

Bake at 180C (350F) for 1.5 hours or until the top is golden and the pasta is cooked through.
