Quick and Easy Side Dishes, Salads & Vegetables - The more creative you get with salads and vegetables, the more fun they can be. Kids respond to colour and freshness and I found that my children would eat more fresh veggies if I made them interesting.
You can dress up a salad by adding nuts (cashews, almonds, peanuts, pumpkin seeds, pine nuts - anything goes!) or dried fruits (raisins, cranberry raisins, dates, figs ... I can go on and on), or even fresh fruits or berries.
