Mexican Style Potato Corn Recipe

This delicious vegetarian recipe for Potato Corn side dish will fast become a family favourite!

Mexican Potato Corn recipe

This is a great Mexican Style Potato Corn Recipe that you can play with to get to the flavours that work for you and your family. This colourful dish is hot and cheesy and kids will love the corn and potato combination. We like it spicy but adjust the heat to what works for your family.

3 tbsp. olive oil
2 onions, chopped
2 cloves garlic, crushed
4 potatoes, sliced into wedges
4 ripe tomatoes, diced OR 1 large tin whole tomatoes
1 green pepper, chopped
1 red pepper, chopped
1 fresh red chile pepper OR 1-3 tsp. crushed hot chile pepper flakes or powder – to taste
1/2 package frozen corn kernels OR kernels from 2 cobs of corn OR 1 can of tinned corn kernels, drained
1 cup grated cheese (any kind you like – cheddar works especially well)
Salt and pepper to taste

Boil the potato wedges in water for 4 or 5 minutes – just to soften them but not cook them through.

Sauté the onion in the olive oil for 2 minutes. Stir in the diced green and red peppers and sauté a few minutes longer. Add the potatoes and stir for about a minute. Now add the tomatoes, garlic and chile pepper (start with just a bit and work your way up to the heat you like - you can always add more). Cover the pan.

Simmer the tomatoes and potatoes over low heat for about 8 minutes, stirring every once in a while. If the vegetables start sticking, you can add a few tablespoons of water. When the potatoes are soft, add the corn kernels. Add salt and pepper to taste.

Taste and adjust the hotness by adding more chile pepper if needed.

Remove the pan from the heat and transfer the vegetables to an oven-proof dish. Sprinkle the cheese over the top and heat in the oven until the cheese is melted. Yummmmm.....
