Pineapple Salsa Recipe – A Simple Salsa Recipe

This is a great Pineapple Salsa Recipe – it is both SIMPLE and DELICIOUS and works well with almost any summer meal!

1 cup chopped fresh pineapple – you can use tinned – but it will be different
¼ cup chopped onion (red is best)
½ green pepper chopped
½ red pepper chopped
1 hot pepper (chipotle/jalapeño or whatever you have)
½ bunch parsley - chopped
½ bunch coriander leaves – chopped (optional)
1 tbsp honey or silan
½ cup corn kernels (fresh, frozen or tinned)
juice of 1 lemon
1 tsp. salt
Pepper to taste

The trick to this recipe is CHOPPING. Everything needs to be chopped finely (except the corn kernels of course). I like this salsa with a lot of spice so I add more hot pepper – use what works for you. I have also made this without the corn kernels and it was really good too.

The pineapple is just so fresh and delicious and mixed with the onion and pepper it makes for a wonderful contrast of flavours. My kids love this on its' own scopped up with pita bread. Or you can serve it on top of the Bulgur Burger Patties or even serve it over quinoa or rice - it will always be a welcome and delcious addition to any meal!

So - what do you do?

Combine all the ingredients and cover with plastic wrap -refrigerate for an hour or more so that all the flavours mix, meld and commingle into a delicious side condiment for any type of meal!

It's just THAT easy!
