A Simple Pasta Recipe with a Rosé Cream Sauce

Penne Pasta Recipe in a creamy rosé sauce is a simple pasta dish that can be served as a light, summery dinner for the family. It is equally impressive as a starter or main dish when you have friends over for a dinner party!

I usually try to use whole wheat pasta but use whatever works best for you.


INGREDIENTS
1 package Penne Pasta
6 medium sized ripe tomatoes
5 tbsp. butter or olive oil
2 cloves garlic, crushed
1/2 tsp. salt
1/2 tsp. dried basil OR 6 basil leaves, chopped
1 1/2 c. cream
1 1/2 tbsp, flour (whole wheat is good too)
2 tbsp. brandy
2 tbsp. tomato paste
Pepper to taste

PREPARATION
Boil water for the pasta according to package directions.

While the water is heating, puree the tomatoes in a blender. The skins can be removed if you like, but it is not necessary.

Melt 2 tbsp. of butter (or olive oil) in a saucepan and stir in the flour. Add the cream and mix with a whisk until the sauce is thickened. Add the brandy, tomato paste, salt and pepper.

Combine the cream sauce with the pureed tomatoes and heat through. The result should be a thick, pinkish sauce bursting with fresh flavours

Serve over the cooked pasta.
