Nili's Onion Quiche Recipe

Delicious and rich, this Onion Quiche Recipe will become a family favourite!

My dear friend Nili is a wonderful cook. She will often join us for Friday night dinner and she will never come empty handed. This Onion Quiche is one of our favourites. It is really delicious and Nili claims it is simple to make.

I finally extracted the recipe from her – it took some time – and she made me promise not to change it in any way. So….. I am sharing Nili's Onion Quiche recipe with you in its original form, but I have added my {healthier} suggestions in brackets – because once I saw the list of ingredients I finally understood why she didn't want to share the recipe with me ;-).

1 1/2 cups flour
100 gr. (1/2 cup) butter {olive oil}
1/2 cup sour cream {low fat yogurt}
1/2 tsp. baking powder
1/2 tsp. salt
100 gr. (1/2 cup) grated fresh parmesan cheese
5 onions - 3 regular and 2 red
4 tbsp. butter {olive oil}
1/2 bunch fresh dill (1/4 cup chopped dill) OR 1 tbsp. dried dill
100 gr. (1/2 cup) pine nuts OR slivered almonds
2 eggs
1 cup sour cream {low fat yogurt}
1/2 tsp. grated nutmeg
Salt and Pepper to taste

Okay, so we start with crust. This can be easily prepared in a food processor or by hand. In either case, do not overwork the dough or the crust will be tough. Simplest way by far – use your food processor.

Place the flour and butter in the food processor. Pulse the butter and flour for a couple seconds – you should have a crumbly mixture. Slowly add the sour cream, baking poweder and salt and process just until mixed. If you are doing this by hand, put the flour in a mixing bowl, cut in the butter (using two knives) until you get to the crumbly stage then add the salt and water and form a dough.

Remove the dough from the machine (or bowl) and form a ball. Wrap in cling film and refrigerate for at least 20 minutes.

Now the filling – slice the onions very thinly. Sauté the onions in butter over low heat, stirring often, until the onions are soft and golden. You do not want to brown them, but you want them to be soft so don't use high heat and take your time.

When the onions are soft and golden in colour, stir in the dill. Now stir in the pine nuts OR slivered almonds and stir them into the onion dill mixture. You want the nuts to toast a bit but not burn, so keep stirring for a minute or two. Remove from heat and set aside

Remove the dough from the fridge. Butter a pie plate (you can use cooking spray – it's easier). Press the dough into the bottom of the pie plate and up the sides. Sprinkle the parmesan cheese over the crust. This will serve two purposes – 1) the crust will not become soggy from the filing and 2) the cheese will melt into the crust giving it a wonderful flavour.

In a separate bowl, whisk together the 2 eggs, sour cream salt, pepper, and nutmeg.

Now, pour the onion-dill-pine nut filing into the pie plate and spread it evenly. Pour the egg-sour cream mixture over the top.

Bake in a preheated oven at (180C/350F) for about 40 minutes but keep your eye on the quiche so it doesn’t burn.
