Jerusalem Kugel Noodle Pudding

This sweet and savoury noodle pudding is also known as "Jerusalem Kugel". The interesting combination of sugar and black pepper makes you want to eat more and more of this typical Sabbath delicacy.

This is really a yummy side dish and can accompany any type of meal. I like to serve this noodle pudding with Beet Soup (Borscht) and a green salad for the perfect Holiday or Sabbath lunch.

1 package (400 gr.) thin noodles or pasta (like spaghetti – try whole wheat!)
1/4 cup vegetable oil
1 1/2 cups sugar (brown or white)
6 eggs
1/2 tsp. salt
1 tsp. ground black pepper

1. In boiling water, cook the noodles per package directions. Drain and set aside.

2. In a large pot combine the sugar and oil and very, very carefully heat over a low flame. Keep stirring. The idea is to caramelize the sugar so first it will melt into the oil and then it will gradually start to darken and caramelize. You have to watch the pot carefully and keep stirring all the time so that the sugar doesn't burn.

3. Once the sugar is a deep golden brown, turn off the heat. Add the cooked noodle to the pot and stir so that all the noodles get covered with the caramel. It can be difficult because the caramel will start to "seize" when the cool noodles are added.

4. Very carefully, stir in the eggs one at a time – remember the pot is hot and you want don't the eggs to cook so add them carefully.

5. Once all the eggs are added, season with salt and pepper. Taste and adjust seasoning.

6. Place the entire mixture into a greased pan – I like to use a round cake pan but any type of baking tin or Pyrex will work. Bake at 180C (350F) for about 1 hour. The top will be dark and crispy, the centre will be dense – the contrast of the sweet and the pepper is interesting and absolutely delicious.

7. My family likes this dish topped with sour cream.
