My favorite Cream of Corn Soup

Ingredients


4 corn on the cobs
4 cloves of garlic (sliced)
1 onion, cut into large chunks
1 cup of vegetable stock
4 cups of water
1/4-1/2 teaspoon of salt
1 cup of soy milk or light cream
ground white pepper

METHOD

1. Cut the kernels off the cobs, keep kernels. Put cobs in medium pot. Add garlic and onion. Add broth and water. Season with salt.

2. Bring to boil , then simmer, covered for 45 min.

3. Take out the cobs and add the corn kernels.
Simmer for 15 min.

4.Puree the soup.

5. Add the soy milk or cream and pepper.
Simmer for 5 min. Add another 1/4 teaspoon of pepper if needed.

Yield 6-8 servings
