Mushroom Soup Recipe

This Mushroom Soup Recipe has a deep, earthy flavour. This delicious Mushroom Bisque is easy to make and will always be a hit!

Mushroom Soup

This is a very easy Mushroom Soup that can be ready in just minutes. You can make it easily using vegetarian bouillon or stock cubes, or, if you have the time to invest, you can use a homemade vegetable broth base.

300 gr. Mixed mushrooms such as Portobello, button, oyster, champignon etc. My market sells a tray of 4 types of mushrooms in a package. Use whichever kind you can find or that you like.
3 tbsp. butter
Sprig of thyme OR 1 tsp. dried thyme
Sprig of rosemary OR 1 tsp. dried rosemary
1 1/2 cups vegetable broth OR water with bouillon cube
1/2 cup white wine OR 1/4 cup vermouth
OPTIONAL: 1 parsnip, sliced
1/2 tsp. ground nutmeg
1/2 cup cream OR soy/rice milk
Salt and pepper to taste

1. Clean the mushrooms and slice.

2. In a soup pot, sauté the mushrooms in butter for about ten minutes.

3. If using parsnip, add to the pot.

4. Add 1/2 of the vegetable stock/water and bouillon, thyme and rosemary. Simmer for a few minutes.

5. Transfer the soup to a food processor and process for a few minutes.

6. Return the soup to the pot and the remaining stock, white wine (or vermouth) salt, pepper and nutmeg.

7. Simmer for 8 minutes.

8. Before serving, add the cream (or soy/rice milk).

9. Serve!
