Mexican Soup Recipe

This Mexican Soup Recipe is so delicious! This is a fabulous Black Bean and Corn Soup with zesty Mexican flavours! The fresh flavours absolutely pop in your mouth!

This bean and corn soup recipe is packed with fresh veggies and is great on a cold winter day. You can adjust the spiciness according to your taste. It is a packed with veggies and protein and can be a meal-in-one soup.

1 large onion chopped
2 -3 cloves garlic minced
3 tbsp. olive oil
1 red pepper, diced
2 zucchini squash, diced
1 tin crushed or diced tomatoes
1 tin black beans, drained and rinsed
1 tin unsweetened corn, drained
1 bunch fresh parsley, chopped finely (about 1 cup)
3.5 cups vegetable broth or water
1 green chili pepper, seeds removed, chopped finely
1 tbsp. dried oregano
1 tsp. cumin powder
Salt and pepper to taste
Sour Cream

1. Sauté the onion in olive oil. Once soft, add the garlic and pepper.

2. When the onion and pepper are soft, add the diced zucchini, tinned tomatoes, beans and corn.

3. Add the vegetable broth and simmer for 15 minutes.

4. Add the chopped chili pepper – use as much as you think is right for your taste. The soup is supposed to be spicy.

5. Season with oregano, cumin, salt and pepper.

6. Add the chopped parsley (you can use spinach if you prefer) and simmer for 15-20 minutes more.

7. Serve with a dollop of sour cream.
