Mashed Sweet Potato

Mashed Sweet Potatoes mixed with White Potatoes, rosemary, garlic and butter and topped with parmesan make for an aromatically delicious twist on the classic mashed spuds!

Mashed Potatoes is the original comfort food. Now perk that up with flavor-packed Mashed Sweet Potato and you have got a winning new recipe for yams!

2 sweet potatoes
2 tbsp. olive oil
3 tbsp. butter
Sprig of rosemary OR 1 tsp. dried rosemary
5-8 cloves of garlic - unpeeled
1/2 cup grated parmesan cheese
1/2 cup cream OR soy/rice milk
Salt and pepper to taste

1. You can either bake the potatoes or boil them in advance – whichever you prefer. To boil, peel both the white potatoes and sweet potatoes and cut into cubes. Boil in salted water until soft. If you prefer to bake them, place the whole, washed, unpeeled potatoes in the oven for about 45 minutes or until baked through (180C/350F).

2. Place the garlic cloves in a baking dish, drizzle the olive oil over top and bake in the oven for 10 minutes.

3. Drain the boiled potatoes OR remove the slin from the cooled baked potatoes and place in a large bowl.

4. Using a potato ricer or a hand masher, mash the potatoes well. Mix in the milk/cream, butter, roasted garlic and rosemary and salt and pepper while mashing.

5. Pour the mixture into a large casserole dish and smooth the top.

6. Sprinkle the cheese over top.

7. Bake at 180C/350F for 10-15 minutes or until the cheese is melted and golden.

8. Serve!
