Lentil Wheat Salad

This salad is easy, interesting and delicious. Lentil Wheat Salad is made with black lentils (sometime know as caviar lentils) and wheat berries is a delicious source of complete protein!

Wheat Berry Lentil Salad

The term wheatberry or wheat berry refers to the entire wheat kernel (except for the hull), comprising the bran, germ, and endosperm. Wheat berries are often added to salads or baked into bread to add a crunchy texture. Joined with lentils, this salad is a good source of protein and a lovely, colourful side dish.

1 cup black or brown lentils
1 cup wheat berries
1 onion (preferably red)
3 green onions, chopped
3 tbsp chopped parsley
1/3 cup craisins (cranberry raisins)
3 tbsp. red wine vinegar
1/4 cup olive oil
1 tbsp. sugar OR honey
Salt and pepper to taste

1. Rinse the lentils. Place them in a pot of water and boil for about 20 minutes. You want the lentils to be cooked ala dente – not mushy. Once cooked, drain the water, rinse with cold water and leave to cool.

2. Rinse the wheat berries. Place them in a pot of water and boil for about 30 minutes until cooked (not mushy). Once cooked, drain and leave to cool.

3. Chop the red onion.

4. Place the lentils, wheat berries, craisins, onions, parsley, sugar (or honey)in a serving bowl.

5. Mix the dressing ingredients well together (wine vinegar, olive oil, salt, pepper) and pour over the salad. Toss.

6. Refrigerate for about 15 minutes before serving to allow the flavours to mingle.
