Lentil Sweet Potato Salad

This delicious salad makes a great side dish or delectable light meal

This wonderful Lentil Sweet Potato Salad combines the nutty and subtle flavours of bulgur and lentils with the natural sweetness of sweet potato (yam) and peas. These combinations work so well together to form a perfect protein combination as well as a really tasty and interesting salad that this Lentil Sweet Potato Salad can be served on its own as a main dish or as a wonderfully nutritious and delicious side dish.

1 cup bulgur
1 cup black or green lentils
1/2 cup frozen peas
2 sweet potatoes
1 red onion
1 4.5-ounce bag baby lettuces OR leaf lettuce, torn into bite-size pieces
1/2 cup pumpkin seeds

1/4 cup olive oil
1/8 cup balsamic vinegar
1/8 cup lemon juice
Salt and pepper to taste
1 small bunch parsley (optional)

4 ounces chilled soft fresh goat cheese cut into rounds (mozzarella works too)

1. Place the bulgur in a large bowl. Boil 2 cups water and pour the boiled water over the bulgur. Let rest for 15 minutes. Drain.
2. Place the lentils in a pot and add 2 cups water. Cook over low heat untilt he lentils are soft (but not mushy). Black or green lentils keep their shape best. Cool.
3. Peel the sweet potato (yam) and slice into 1/2 inch circles. Boil the potato pieces for 10 minutes or until soft but not mash-able mushy. Remove from water and dice into baby bite-size pieces. Set aside
4. Slice the red onion very thinly.
5. Chop the parsley coarsely

Now we are going to assemble the salad. Mix the bulgur and lentils together. Add the peas – they don't need to be defrosted or cooked. Mix in the diced sweet potato and the red onion slices.

Now whisk together the dressing ingredients including the parsley. Pour this over the salad and toss to mix everything up. The bulgur and lentils and potato will soak up all the flavours. Yummy!

Toss in the lettuce now and put your salad on a serving platter. Place the cheese slices decoratively over the top of the salad and serve it up to your family and friends. It is sure to be a crowd pleaser. It's great for picnics too!
