Lentil Salad with Root Vegetables


This is a delicious Lentil Salad which will dress up any meal. It can even be served as a light meal on its' own!


This is a lovely lentil salad recipe with delicious root veggies and a wonderful lemon-herb dressing.

A word on lentils: Lentils contain high levels of proteins, including essential amino are a good source of dietary fiber, folate, vitamin B1, and minerals. You can read more in the Vegetarian Nutrition page.

INGREDIENTS
1/2 kg (1 lb) black or brown lentils
4 carrots
1 sweet potato (yam)
1 green onion, chopped
3 tbsp chopped parsley
1/4 tsp dried thyme
4 tbsp. lemon juice
Grated lemon rind (optional)
1/4 cup olive oil
Salt and pepper to taste

PREPARATION
1. Rinse the lentils. Place them in a pot of water and boil for about 20 minutes. You want the lentils to be cooked ala dente – not mushy. Once cooked, drain the water, rinse with cold water and leave to cool.

2. Dice the carrots to 1 inch cubes.

3. Peel and cube the sweet potato (yam) to larger cubes.

4. Spread the vegetables onto a baking sheet. Sprinkle with salt and thyme and drizzle olive oil over top.

5. Bake at 180C (350F) for 30 minutes. Move the vegetable cubes around in the pan and bake for about 10-15 minutes more. You want them cooked through but not mushy.

6. Remove the veggies from the oven and let them cool.

7. Once all the ingredients are cooled, place the lentils, carrot, potato, chopped green onion and parsley in a salad bowl.

8. Mix the dressing ingredients well together (lemon juice, lemon rind, olive oil, salt, pepper and a bit more thyme) and pour over the salad.

9. Refrigerate for about 15 minutes before serving to allow the flavours to come together.
