Greek Lemon Rice Recipe

One of the best rice side dish recipes out there!

This Greek Lemon Rice recipe is a lovely side dish. It can easily be made with a combination of white and brown rice if you want to "mix it up" a bit, or go for all brown rice for a nuttier flavour.

This rice dish can complement any meal. It has a creamy texture with a pleasant lemony-tang. Combine it with Greek Tzatziki Cucumber Dip or Greek Salad and you complete proteins and a yummy Greek-inspired meal.

1 cup brown rice (use white or a mix of both if it works better for you)
2 tbsp. olive oil
2 cups water
1 garlic clove, minced
1 lemon, juiced
zest of one lemon
1 tbsp. dried oregano
salt and pepper to taste
2 tbsp. chopped chives

Heat the olive oil in a saucepan. Add the rice and stir until the rice grains are toasted and coated in the oil. Pour in the water and cook covered until the rice is cooked through. Cooking time can depend on the type of rice used.

When the rice is cooked through, add the garlic, lemon juice and zest, oregano, salt and pepper and mix well. Cover the pot and allow the flavours to merge with the rice. Serve with a sprinkling of chives
