Leek potato Onion and Carrot Soup

4 medium leeks
2 medium potatoes
2 onions
2 carrots
2 garlic cloves
2 celery sticks
7 cups vegetable stock or 2 vegetable stock cubes in 7 c. water
4 tbls. olive oil
salt and pepper

Cut the leeks in half, clean under running water to remove any chop into very small pieces.
Peel and roughly chop the onions.

Peel, finely chop the garlic.

Wash the carrots, chop them into cubes.

Wash the celery, dice.

Peel the potatoes them chop into 1 cubes. This can be done while the other vegetables are being sauteed.

Heat the olive oil in the soup pot. Stir the vegeteables in except the potato and saute 5 mins. Add the stock (soup cube if using) and chopped potatoes.
Simmer 30-60 minutes until all vegetables are cooked through.
The soup can be served chunky as-is or can be pureed for a smooth creamy texture.
