Ice Cream Dessert Flower Pot

This Ice Cream Dessert Flower Pot is a variation of my Ice Cream Cake recipe that I like to serve up for company or for birthdays. It is less labour-intensive than the ice cream cake but no less impressive or fun.

16 chocolate sandwich cookies (Oreos® are really the best)
3 tbsp. butter*
1 quart of your favourite ice cream – I like to use vanilla or caramel
1 jar store-bought fudge sauce
1/2 cup slivered almonds
8 Small plastic or terra cotta pots or any other small containers
8 edible flowers** or candy flowers
A few mint leaves for effect
**Edible flowers can be carnations, clover, lavender, marigold, nasturtiums etc.

Remove the ice cream from the freezer to soften while you start on the assembly.

Place the cookies and the butter in the food processor bowl and process well. You want fine crumbs. * If you use the chocolate covered Oreo® cookies, you can omit the butter and the taste is even better.
Now add the almonds and pulse a few times to crush but you still want some crunch.

Fill the small pots 2/3 full with ice cream and place them in the freezer so the ice cream hardens. Once the ice cream is firm, pour the fudge sauce over the top to form a 1/2 inch layer of fudge. Freeze.

When the fudge is hardened, remove from freezer and divide the crumbs among the pots. It should look like a flower pot with earth.

At this point you can freeze the pots (covered with cling wrap) until you are ready to serve dessert. Remove the flower pots from the freezer 10 minutes before serving. Place a flower in each pot and place mint leaves around to look like a real flower is growing in the pot.

These Ice Cream Flower Pots will impress your family and friends every time you serve them – They're great for kids parties –and are always fun.
