Not-So-Traditional New Year Honey Cake


On the Jewish New Year it is customary to serve Honey Cake. This version is absolutely delicious – moist and rich with chocolate bits and a touch of brandy!


I can't take credit for this recipe. It was given to me by a colleague from work and he got it from his wife, Sigal. But I can vouch that it is yummy (because I tasted it and it was terrific). And it's a bit different than the classic honey cake – this will surely be a hit with your family!

INGREDIENTS
2 cups flour
2 tbsp. cocoa powder
2 tsp. baking powder
1 1/2 tsp. baking soda
3 eggs
Pinch of salt
1 cup sugar
1 cup honey
3/4 cup vegetable oil
2 tbsp. brandy or liqueur of your choice
1 cup strong tea (cooled)
1/2 cup chocolate chips or chocolate bits

PREPARATION
1. Preheat the oven to 170C (340F).

2. Sift the flour, cocoa, baking powder and baking soda together.

3. Beat the eggs with the pinch of salt. Gradually add the sugar and keep beating until they are light and airy.

4. Beat the sugar, brandy and oil into the eggs.

5. Add the sifted dry ingredients alternately with the tea.

6. Fold the chocolate bits (chips) into the batter.

7. Pour the batter into 2 greased English Cake tins or one large 19x13" Pyrex dish. Bake for 45-50 minutes or until done.
