Hava's Fruit Cake

INGREDIENTS & METHOD


1 kg (1/2 lb) fruit (apricots are best but apples or peaches work just as well)
4 tbsp sugar

Soak the sliced fruit in the sugar for at least 1 hour.

Place the fruit at bottom of baking tin with the juice.

Mix together:

1 cup oil
1 cup sugar
2 vanilla sugar
4 eggs
1 + 1/2 cups flour
1 package (15 gr) baking powder

Pour over fruit and bake at 150 - 175C (~400F). for about 50 minutes,
When the top begins to set sprinkle with 100 grams chopped walnuts + 2 tbsp brown sugar.

editor's note: I think you are meant to sprinkle the nuts and brown sugar while the cake is still baking and return it to the oven until done
