Simply delicious Grilled Eggplant Recipe –Authentically Mediterranean and Totally Delicious!
So simple yet so yummy – this Grilled Eggplant Recipe is sure to be a hit!
Grilled Eggplant – AKA aubergine – is a very versatile vegetable. It can be served in many forms. Eggplant take on the flavours added during cooking and can be baked, fried, stir fried, chopped, grilled – well you get my point – it's a very "flexible" vegetable. This recipe is an easy and quick way to serve up eggplant.
INGREDIENTS 2 eggplants 1/4 cup olive oil 1/2 cup Tahina Salt and pepper to taste
PREPARATION Wipe the outside of each eggplant with a dry kitchen towel. Now, there are a few ways to do the next step – choose whichever is better for you.
Option 1: Place the whole, unpeeled eggplant over an open flame on your gas stove top. Do not remove the stem on the top. Yes, this will dirty up your stove top but it gives the eggplant a deep grilled flavour. Grill the eggplant, turning every few minutes until it is deflated and charred. Remove it from the heat and set aside to cool for a few minutes while you grill the second eggplant.
Option 2: Place the whole, unpeeled eggplants in a baking dish a put them under the grill in the oven. Do not remove the stem on the top. Turn every few minutes. When the eggplants are deflated and charred, remove them from the heat and set aside to cool for a few minute.
Option 3: Grill the whole, unpeeled eggplants (do not remove the stem on the top) over the barbecue turning every few minutes. When the eggplants are deflated and charred, remove them from the heat and set aside to cool for a few minute.
Easy – right….
Now, slice each eggplant in half lengthwise – trying to keep the shape and the skin in tact as much as is possible (keeping the stem on the top). When I serve this as a main dish, I serve both halves as one serving. If it's a starter, then one half per person.
Drizzle olive oil over the grilled eggplant. Spoon the tahina over the eggplant and serve. If you want to get fancy, sprinkle some paprika over top.
When eggplant is grilled, the flesh becomes creamy soft. Combined with the tahina, this is a really filling and delicious dish.
