Simple Fruit Lassi Recipe

This is a simple adaptation of the Indian Fruit Lassi recipe – deliciously refreshing, tasty and nourishing.

Many years ago an Indian friend of mine introduced me to the Lassi Yogurt drink and to this day I find this to be an invigorating, tasty and refreshing drink – most enjoyable year round but I especially love it in the summer months. And it is E-A-S-Y – really S-I-M-P-L-E!

For each serving:
1 single-portion container plain yogurt
1 tbsp. sugar OR honey (you can substitute with sweetener if you like)
1 cup ice cubes
1/4 cup mashed fruit ***(see note)
Pinch of salt
1/4 tsp. ground cardamom
OPTIONAL: ground pistachio nuts
OPTIONAL: 4 drops of rose water

*** you can use banana, strawberry, mango, tinned or fresh lychee OR you can make a plain lassi without any fruit at all.

Place all the ingredients into the blender and whiz until smooth. If the drink is too thick, add a little bit of water. Sprinkle the pistachios over top and serve immediately.

More LASSI ideas

Try Mint Lassi using the same method as above but use:
A handful of mint leaves, chopped
1/4 tsp. cumin
Pinch of salt
Ice and sugar
Whiz in the blender and…. Yummy!

And what about a staying more true to the original….? The original Indian lassi recipe was actually not a sweet drink. It was made with a thick, buttermilk-type yogurty milk (usually buffalo milk). We'll stick to yogurt – so much simpler and so, so tasty!

Savoury Lassi Yogurt Drink
For each serving:
3/4 cup yogurt
1/4 cup water
1 fresh green chili pepper, seeded
1/2 tsp. cumin
Salt and pepper
Fresh coriander leaves OR mint leaves

Whiz all the ingredients together in the blender and serve.
