Easy Cauliflower Recipe

This easy cauliflower recipe is about as simple as food preparation can get. Using this simple cooking technique, vitamins and nutrients are retained and you don't lose any of the flavour in the cooking process – win-win all around!

Cauliflower is a cruciferous vegetable belonging to the same family as cabbage, broccoli, and brussel sprouts. I know of kids (and even adults) who have shunned these veggies and refused to eat them.

But that's because if you don't cook cauliflower, broccoli, cabbage and brussel sprouts properly they become grey and mushy and tasteless. So I'm here to show you how you can cook cauliflower (try this technique on other veggies too…) in the simplest way possible, while retaining nutrients and FLAVOUR.

And you don't even dirty a pot in the process – how cool is that!

1 head cauliflower
Salt and pepper
Olive oil
1 clove garlic, crushed

Prepare the cauliflower by removing the leaves from the core. I like to soak the cauliflower in water and lemon juice before cooking to ensure that any grit etc. isn't lurking within the flowerets.

Place the entire cauliflower on a length of tin foil large enough to cover it completely.

Drizzle olive oil over the top of the cauliflower. Sprinkle with salt and pepper (sea salt is best if you have it) and then spread the crushed garlic over top.

Loosely seal the tin foil around the cauliflower. (you want to leave space for the steam which will form during the roasting process).

Place in 180C (350F) oven and bake 20 minutes

This lovely low carb vegetarian recipe can be a simple side dish to any dinner menu or even an easy, quick and light meal.

You can vary the flavours by adding any (or all) of the following flavours – get creative!
*Chili flakes
*Lemon zest
*Chopped parsley
*Chopped Rosemary
