Diane's Vegetarian Vegetable Stew

1. 3 cans vegetarian 100% fat free vegetable broth

2. 5 bouillion cubes
3. 1 can of Garbonzo beans 50% less sodium
4. 1 1 oz. can of corn and pepper (red & green) whole kernel
5. 1 can Black Beans 50% less sodium
6. 1 pkg. Smart Ground (original) veggie protien crumbles
7.boiling onions,chopped instant or 1 reg. yellow onion chopped and diced
8.Seasoning with Grill Mates Lemon Pepper with herbs - to taste
9. 1 1/2 cups of beer - any kind
10. 1 Rutabaga sliced thinly and chopped into small pieces
11. 2 small turnips peeled and diced into cubes 12. 1 Small Eggplant peeled, sliced and diced small
13. 2 small Carrots peeled and sliced into small pieces
14. 1 can or 1 cup fresh mushrooms sliced or whole
15. 1 or 2 pieces of celery diced up or use celery salt

In a Crock Pot:
Pour 3 cans of vegetarian 100% fat free vegetable broth in the Crock Pot. Fry 1 pkg. of Smart Ground Meat Crumbles in a small amount of vegetable oil (or substitute).

Add the onions and fry until done.
Meanwhile add all the other ingredients to the Crock Pot.
Add veggie-meat and onions and anything you like. Turn Crock Pot on high for about 3- 4 hours or until done.

Hint: can add edamame peas, can of tomatoes any kind, diced sweet potatoes, also smart vegetarian bacon cooked crisp can be added.

lotsa good vegies!!

i made this recipe in my crockpot and it has so many vegies that i loved it but my husband being a meat n potato man said tooo many vegies! I will eat it, had it for lunch and dinner and it was filling and healthy! thanks, looking for more healthy choices all the time.
