Cornmeal Muffins

1 cup cornmeal

1 cup whole wheat flour
1 tsp baking powder
1 tsp salt
1/4 cup silan date honey OR honey
1 egg
1 1/2 cup buttermilk (OR 1 1/2 cup milk with 1 tsp lemon juice)
1/2 cup vegetable oil
1/2 cup corn kernels (preferably fresh corn)
oil or melted butter to line the muffin tins
OPTIONAL: 1 tbls sweet spicy chili sauce

1. Heat oven to 200C (380F)
2. Grease the muffin tin with melted butter or vegetable oil
3. Mix all the dry ingredients together in a large mixing bowl
4. Mix all the wet ingredients together in a second mixing bowl
5. Add the wet ingredients to the dry and mix. Mix in the corn kernels.
6. Pour the mixture into the prepared muffin tin.
7. Bake for 25 minutes or until done and the muffins are golden.

Cool and serve. These are a big hit and are really delicious.
